Real Irish Shepard's Pie from a real Irish Girl from Ireland
The name says it all! For an added touch, try using a pie-crust as well!
Ingredients:
- 3/4 lbs ground beef
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 green pepper, finely chopped
- 1 jar of tomato sauce (about 16 oz)
- 3 medium potatoes, peeled
- 1 cup milk
- 1/4 cup butter
- 1 cup grated cheddar cheese.
Meat Sauce:
- Brown ground beef in a skillet.
- Add onion, garlic, and peppers to cook along with beef. Drain excess oil/juices.
- Add tomato sauce.
- Leave on low heat for about 15-20 minutes, and set aside.
Mashed Potatoes:
- In separate pot, boil water.
- When water is boiling, add peeled potatoes, and cook for several minutes, making sure potatoes are softened a bit.
- Remove from heat, and drain water.
- Add milk and butter and begin mashing. Continue adding milk and butter, and continue mashing until desired consistency.
Directions:
- Preheat oven to 375 degrees.
- In a 9 in. glass pie plate, spread tomato meat sauce mixture on the bottom. Layer mashed potatoes on top. Sprinkle cheddar cheese on top of mashed potatoes.
- Bake for at least 35 minutes. Let cool a bit, then serve.
Not so Irish part:
Before baking, add a thawed Safeway pie crust on top. Make sure to tuck in excess pie crust. Be sure to make slits in the crust and poke it with a fork so that the pie can breathe during baking.
