Mushroom Gravy
Pour this over some mashed potatoes for a great side dish.
Ingredients:
- 3 tbs canola oil
- 2 cups mushrooms sliced thin
- 1 onion finely diced (about 1 1/2 cup)
- 4 cloves of garlic, minced
- 1 cup red wine
- 4 Tbsp flour
- 1 can chicken broth (10 oz.)
- 1/2 cup water
- salt & pepper to taste
Directions:
- Coat bottom of saucepan with canola oil. Mix in mushrooms and saute.
- Add onions, garlic, and red wine. Mix well until wine boils off. The onions should cook off until they are tiny. All that should be left are the mushrooms, tiny bits of onion and garlic, and a bit of oil.
- Mix in the flour. Mix well and often until it becomes a paste-like mixture.
- Add chicken broth. Mix often to keep mushrooms from burning onto the surface. As the broth boils, the mixture should thicken.
- Add water to the desired consistency. I like mine thick, so I only use 1/2 cup.
- Add salt and pepper to taste.
