Honey-Glazed Spiced Chicken

Here's a recipe that I tried out, and my aunt loved. You could even try using fish instead of chicken.


Ingredients:
  • 4 medium-sized chicken quarters, with the skin on
  • 2 tbsp extra virgin olive oil
  • 1 rounded tbsp clear honey
  • 2 level tbsp Dijon mustard
  • 2 tsp curry paste or 1 tbsp fresh lemon juice
Directions:
  1. Preheat the oven to 350 degrees F (180 C).
  2. Arrange the well-dried chicken quarters, side by side, in a roasting tin or baking dish.
  3. Stir together all the glaze ingredients until thoroughly mixed, then spoon over the chicken.
  4. Cover the dish with foil and bake for 20 min (35 min if straight from fridge). Remove foil and coninute to bak e for another 20-30 minutes, spooning over the glaze two or three times, until the chicken is a rich brown.
  5. Serve hot or at room temp.
