Randy's Fried Rice
I've had a lot of requests for this recipe. Oddly enough, this is one of those recipes that I've been preparing ever since my mom taught me how to cook, and the exact recipe (as far as I know) has never been written down. It's always been one of those recipes where you just toss in a handful of this and that until it looks and tastes about right. Additionally, this recipe has also evolved over the years. Here is my attempt to write down and actually estimate some proportions.
(By the way, Wai says that this recipe has strayed so far from its Chinese origins that calling this Chinese fried rice would be heresy, hence this is my fried rice.)
Ingredients
- 1 1/2 cup uncooked rice
(I use a blend of white rice and brown rice)
- 1 lb. meat, pre-cooked and chopped into small pieces
(Depending on my mood, I will use anything from chicken, to Asian BBQ pork, to shrimp, to a combination of different meats. Down below, I have some tips on how to prepare chicken if that's what you prefer)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 cups assorted vegetables, chopped
(Once again, this is left up to your tastes. In the past, I've used a range of vegetables including broccoli, carrots, corn, red pepper, cucumber, etc. If you're in a time crunch, a bag of mixed frozen vegetables also works just fine)
- 2 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 Tbsp BBQ sauce
- 3 Tbsp canola oil
- 2 eggs
- 1/2 tsp chili powder
- pepper, to taste
Directions
- Prepare rice in a rice cooker or over stove top, as directed on box or according to rice cooker directions.
- Add oil to saute/fry pan and put over medium/high heat.
- Scramble the eggs, then set aside.
- If desired, prepare the chicken (as directed below) then set aside.
- Re-apply oil if necessary, then add garlic, onion, and vegetables. Mix until vegetables have been well cooked, yet still slightly crispy.
- Add in the rice, meat, and eggs, and mix well.
- Add the chili powder and mix well.
- Add in the oyster sauce, then the soy sauce, then the BBQ sauce. Mix well.
- Add pepper to taste.
- Serve and enjoy!
Optional Chicken Prep Ingredients
- 1 lb. uncooked chicken, cubed
- 2 Tbsp cornstarch
- 1 pinch sugar
- 2 -3 Tbsp soy sauce
- 2 Tbsp canola oil
Optional Chicken Prep Directions
- In a bowl, combine chicken and cornstarch. Mix well, so that the chicken is lightly coated in cornstarch.
- Add the sugar and soy sauce.
- Let sit for at least 30 minutes
- Heat the oil in a saute/fry pan.
- Add the chicken, and stir fry until it is no longer pink.
- Remove the chicken from heat and set aside.
- You can use the residual oil to help prepare remaining ingredients.
