Citrus Yams
This one has become a holiday favorite in my family. Avoid the rather trite marshmallow and yams, and try this one out instead.
Ingredients:
- 2 lb. Sweet Potatoes (about 6 medium)
- 2/3 cups Sugar
- 1 tbl Cornstarch
- 1 tsp Salt
- 1/2 tsp Grated Orange Peel
- 1 cups Orange Juice
- 2 Tbsp Butter or Margarine
Directions:
- Pre-heat oven to 400 degrees F. Pare Sweet Potatoes; cut up. Arrange in ungreased 1 1/2 quart casserole dish.
- In small saucepan, stir together Sugar, Cornstarch, Salt & Orange Peel.
- Slowly stir Orange Juice into sugar mixture. Add Butter. Cook, stirring constantly, until mixture thickens & boils.
- Pour hot orange juice mixture over sweet potatoes in casserole. Cover; bake 1 hour, basting occasionally.
