Chocolate Chip Cookies a la Randy
Who can refuse a nice fresh batch of chocolate chip cookies? What sets this one apart is the little bit of Kahlua added into the dough. Mom's don't worry. The alcohol will be cooked off as it heats, but it adds a great dash of flavor!
Ingredients:
- 2 cups all-purpose flour
- 3/4 cup white sugar
- 1 tsp baking powder
- 3/4 cup brown sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 tbsp vanilla extract
- 1 tbsp Kahlua
- 1 cup dark semi-sweet chocolate chips
- 1 cup white chocolate chips
- pinch of salt
Directions:
- Preheat oven to 375 degrees F. Line a baking pan with wax paper.
- In a large bowl, combine butter, white sugar, and brown sugar. Mix well.
- Add eggs, Kahlua, vanilla extract, baking powder, and salt. Mix until you get a gooey consistency.
- Slowly add flour half a cup at a time and mix well to thicken the dough.
- Add in chocolate chips and mix well.
- Spoon out dough onto baking pan, about 1 rounded tbsp per cookie. Spread them so that they are at least 2 inches apart from each other.
- Bake for 10 minutes, or until outer rim of cookie is just slightly brown.
- Chill for few minutes before removing from pan.
- Chow down!
