Double Tomato Bruschetta

Here's another favorite from AllRecipes.com with its ingredients slightly modified for an even healthier dish. This is great snack for parties or if you want a light meal, scale down.


Ingredients:

  • 6 roma tomatoes, chopped
  • 1/2 cup sun-dried tomatoes, packed in oil
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp balsamic vinegar
  • 1/4 cup fresh basil, chopped
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1 French baguette (for even tastier, try Costco's rosemary, olive oil bread)
  • 2 cups shredded mozarella cheese
Directions:
  1. Preheat the oven on broiler setting.
  2. In a large bowl, combine roma tomatoes, sun-dried tomatoes, garlic, olive oil, balsamic vinegar, basil, salt, and pepper. Allow mixture to sit for at least 10 minutes.
  3. Cut baguette into slices about 3/4 inch thick. Arrange slices in a single layer on a baking sheet. Broil for 1 - 2 minutes, until slightly brown.
  4. Divide tomato mixture evenly over baguette slices. Top slices w/ mozarella cheese.
  5. Broil again for about 5 minutes, or until cheese is melted.
